Tabbouleh is a Levantine vegetarian dish made of finely chopped tomatoes, parsley, mint, onion and bulgur, seasoned with olive oil, lemon juice, and salt. Some variations use couscous instead of bulgur.


  • olive oil ⅓ cup
  • lemon juice 1 tbsp
  • potato 5 middle
  • carrot 3 middle
  • nutritional yeast flakes ½ cup
  • water ½ cup
  • salt ½ tbsp
  • garlic powder 1 tsp
  • onion powder 1 tsp
  • cayenne pepper ½ tsp


Boil potatoes and carrots until soft, like for puree. Then mix all the ingredients together in blender, or with hand blender, to achieve smooth texture. Basic spices can be varied, due to your taste.

Store in fridge up to a week.
